The Grand Prix de la Pâtisserie de la Ville de Paris was awarded on 25 November 2025 at the Hôtel de Ville. This fifth edition drew thirty-two candidates: eighteen professionals and fourteen apprentices. Enzo Baptista, head of creation and development at BO&MIE, wins the professional category.
A brief: Paris, city of love
The set theme for 2026 was “Paris, city of love”. Amour³ answers it with an openwork chocolate cube. Its faces show the Eiffel Tower, the Pont des Arts, the Moulin Rouge and Montmartre — four places, four walls, one object. The form is not decorative: it is what carries the subject.
Each face stands for a kind of love: the Eiffel Tower for the eternal, Montmartre for the sacred, the Pont des Arts for the one you seal, the Moulin Rouge for the extrovert. The cube does not illustrate the theme, it unfolds it.
Hazelnut, in several forms
Inside, hazelnut is worked in several forms, some of it grown in the Vexin. A mousse made with a beer brewed in Paris completes the whole and gives the piece its local footing. The name, cube included, says both the geometry and the theme.
Enzo Baptista is twenty-nine and heads creation and development at BO&MIE. He runs the pastry range, from trial to production — the same path followed by our creations.
What the jury judged
Taste counted for 45% of the score. The rest was split between technique, creativity, aesthetics, and the quality and origin of the raw materials. The jury was co-chaired by Pierre Hermé, among others. The prize was presented at the Hôtel de Ville.
