In June 2026, the house moves a pillar of its concept that is seldom talked about: coffee. It teams up with Coutume, one of the pioneers of speciality coffee in Paris, for an exclusive reference distributed in every shop.

A single origin, chosen for the puff pastry

The choice falls on the Mogiana, a Brazilian from a family cooperative in São José do Rio Pardo, hand-picked between nine hundred and eleven hundred metres. Notes of cocoa, praline and dulce de leche.

This profile wasn’t chosen out of abstract taste. A coffee that is too acidic or too floral fights with butter puff pastry; this one goes along with it. It is the same reasoning as for a pastry — you choose by tasting the whole, not the ingredient on its own.

Why coffee matters

At the time of the launch, coffee and drinks account for close to 30% of the group’s turnover. It is no longer a commodity set down beside the counter: it is a product line in its own right, which deserves the same care as everything else.

Every Monday in June, a Coutume barista set up in a different shop, with an espresso or an americano offered for every pastry bought. The addresses are on the bakeries page.
