BO&MIE unveils its new creations for 2019

Sortir à Paris devotes a feature to the creations developed by Timothy Breton for BO&MIE in early 2019, between new viennoiseries and pastries.

Timothy Breton joins BO&MIE in December 2018. Two months later, his first collection reaches the shops and Sortir à Paris comes to see it.

A collection, not a fixed menu

The outlet describes an offer that combines visual work with research around the classics of viennoiserie and pâtisserie. The principle takes hold at that moment and will never change: evolve the menu in waves, and use these collections as a testing ground.

A year and a half in, and already spotted

The article also shows how quickly the house established itself. Barely more than a year after Turbigo, Sortir à Paris already presents BO&MIE as an address known for its highly visual creations.

The article comes out a fortnight before Valentine’s Day, and the collection carries its seasonal pieces. That is the other rule that takes hold then: festive dates are not a backdrop for unchanged products, they give rise to creations that exist only for them.

Finally, in the same piece, Sortir à Paris announces the forthcoming opening of a second address at 359 rue Saint-Martin. It will open the following summer — the subject of our article on Saint-Martin.
