In May 2024, Fast & Casual sits down with Jean-François Bandet in the rue de Rivoli shop. The 2023 financial year has just passed €15 million in revenue across five sites, including Barcelona.
Two more markets
International expansion is now an avowed priority. But the interview is mostly about two new grounds: B2B, and what the trade calls high-footfall locations — railway stations, airports, department stores. Two markets that have nothing in common with a high-street shop, and that force the question of production to be asked afresh.

The tooling keeps pace
2024 is also the year the Clichy Lab comes on stream. The two moves go together: you don’t roll out across several channels without a facility able to absorb the volumes without changing the method.
The episode thus documents a precise moment: the shift from an essentially Parisian network to a brand preparing its roll-out across several channels and several countries.
Six years separate this interview from the first shop. That is not long for a bakery, where time is usually counted in generations. The two markets discussed here — working with groups, and high-traffic sites — will be the ones carrying most of the openings of the following two years.
